WINEMAKING Our approach here follows the philosophy for handmade winemaking employed across all of our wines. Specifically for this Shiraz: cold soaking and hand plunging in open fermenters, and cool fermentation between 18C and 24C, to preserve fruit flavours and characteristics; wild
