Bergère ‘Les Peignottes’ 2017 fogoneu The much loved Sauvage hasThey say good things come in 3s and rounding out the Parcellaire wines is a 100% Chardonnay from the might Oger Grand Cru in the Cte des Blancs. Three plots are harvested for Les Peignottes that were planted in 1920, 1975 and 1990 on pure chalk soils. 45% fermented in old Burgundian barrels, aged on lees for 5 years and bottled with zero dosage. The wine is a bundle of chalk driven nervous energy and tension but at no points is aggressive or abrasive.
